Latin-American food plan recipe
Baja-style cauliflower savory toast
There is no need to skip Taco Tuesday because you are cleaning.
Lime, watermelon and apple cider vinegar-marinated vegetables sit on top of crisp corn tortillas for a wrinkle and colorful fiesta on your face.
Designed for the first stage, this recipe can work in the next stage, excluding the tortilla.
Pro Tip: Choose raw apple cider vinegar for natural probiotic benefits.

2 tsp. Avocado oil
2 cups / 170 g cauliflower flowers, chopped
Medium onion, chopped
2 medium carrots, finely chopped
½ Medium cucumber, chopped
4 medium celery stalks, chopped
1 medium red bell pepper, finely chopped
½ Cup / 10 g Fresh Coriander Leaves (Coriander Leaves)
½ Medium avocado, cut
¼ Cup / 60 ml apple cider vinegar
1 medium lime, juice
1 medium jalapeno pepper, divined, deciduous, finely chopped
6 teaspoons sea salt (or Himalayan salt)
8 teaspoons ground black pepper
Nonstick avocado oil cooking spray
2 (6-inch / 15-cm each) corn tortillas
- Heat oil in a large nonstick pan over medium-high heat.
- Add cauliflower; Cook, stirring occasionally, for 8 to 10 minutes or until soft. Remove from heat.
- Add onion, carrot, cucumber, celery, bell pepper, coriander, avocado, vinegar, lime juice, watermelon, salt and pepper; Stir to combine. Refrigerate in an airtight container for 1 hour or until cool.
- Once the sauce has cooled, heat a dry nonstick skillet over medium-high heat; Light coating with spray.
- Add the tortillas; Cook for 3 minutes. Invert Cook for an additional 3 minutes or until crispy.
Pro Tip: To make this recipe during phases 2 and 3, skip the tortilla.
