  1. Heat oil in a large nonstick pan over medium-high heat.
  2. Add cauliflower; Cook, stirring occasionally, for 8 to 10 minutes or until soft. Remove from heat.
  3. Add onion, carrot, cucumber, celery, bell pepper, coriander, avocado, vinegar, lime juice, watermelon, salt and pepper; Stir to combine well. Refrigerate in airtight container for 1 hour or until cool.
